1 car I would not buy as an investment car expert:

The Volkswagen Golf R Mk8. The most powerful production Golf ever made. 320hp. Four wheel drive. £50,000 new in 2025 with options. And worth £38,000 today. A loss of £12,000 in 1 year.
The Golf R has one fundamental problem as an investment. Volkswagen will always make another one. There is no end of era. No last of its kind. No story. Just a very fast family hatchback that gets replaced every 5 years by a faster one that makes the previous one worth less.

Instead buy a Volkswagen Golf GTI Mk2 16V. The original hot hatch icon. Only built between 1985 and 1991. The car that defined an entire category. In 2016 you could have bought a clean example for £8,000. Today investment grade examples sell for over £25,000. A gross profit of £17,000 in 10 years. One Golf loses £17,000. The other makes £17,000. The difference is 30 years of production history.
